Baby Kale with Apples

  • 1 large apple with skin on
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced fine
  • 16 ounces of baby kale leaves, rinsed but not dried
  • 1/8 teaspoon salt
  • 1/2 teaspoon black pepper

Makes four servings

  1. Dice apple into 1/3-inch cubes. Set aside while you cook the kale.
  2. Heat the oil over medium heat in a sauce pan with a lid.
  3. Add the minced garlic and cook for about one minute.
  4. Add the baby kale leaves and toss to coat with the oil and garlic.
  5. Cover the pan and cook until the kale is just wilted. Leaves should be bright green and the stems should be soft, This usually takes about two to three minutes.
  6. Remove from heat; add apple pieces and season with salt and pepper.
  7. Mix well to evenly distribute apple and seasonings.
