Healthy Recipes: Baby Kale with Apples

Baby Kale with Apples
- 1 large apple with skin on
- 1 tablespoon olive oil
- 2 cloves garlic, minced fine
- 16 ounces of baby kale leaves, rinsed but not dried
- 1/8 teaspoon salt
- 1/2 teaspoon black pepper
Makes four servings
- Dice apple into 1/3-inch cubes. Set aside while you cook the kale.
- Heat the oil over medium heat in a sauce pan with a lid.
- Add the minced garlic and cook for about one minute.
- Add the baby kale leaves and toss to coat with the oil and garlic.
- Cover the pan and cook until the kale is just wilted. Leaves should be bright green and the stems should be soft, This usually takes about two to three minutes.
- Remove from heat; add apple pieces and season with salt and pepper.
- Mix well to evenly distribute apple and seasonings.
