Recipe: Scrambled Eggs with Fresh Vegetable Medley
Yields: One serving
- 8 oz Egg Beaters or 3 eggs, lightly beaten (limit eggs to 3/week)
- 1 cup fresh asparagus, finely chopped
- 1/2 cup mushrooms
- 1/4 cup onion, chopped
- 1/4 cup red bell pepper
- 1 tbsp salsa
- Cooking spray
Add cooking spray to nonstick skillet. Sauté onion, pepper and mushrooms until tender. Add eggs and asparagus to pan. Cook over medium heat until eggs are soft-set. Top with salsa.
