Recipe: Quick Chicken Fajitas
Yields: one serving
- 2 (7 inch) whole wheat tortillas
- 1/4 tsp ground cumin
- 1/2 tsp chili powder
- 8 oz boneless skinless chicken breasts, cut into strips
- 1 tsp olive oil
- 1 cup thinly sliced red and orange pepper
- 1/2 cup sliced red onion
- 1 tbsp fat free sour cream
- salt/pepper to taste
Sprinkle cumin and chili powder over chicken breast strips. Heat medium nonstick skillet and add tsp olive oil. Add chicken strips. Cook 3 minutes. Add bell peppers and onion. Sautee until vegetables are tender and chicken is done. Warm tortillas in microwave for 30 seconds.
Serve chicken/vegetable mixture in tortillas and top with fat free sour cream.
