Ingredients
- ½ cup grape or cherry tomatoes, cut in half
- 1 cup cucumber, seeded and sliced into half-moons
- ½ cup red onion, thinly sliced
- 1 tablespoon red wine vinegar
- Kosher salt and pepper to taste
Directions
- Add all ingredients into a bowl and mix gently until combined. Serve immediately or store in an air-tight container for 3-4 days.
