Combine pudding, flour, baking powder and nutmeg in a medium size bowl. Add egg and water to dry ingredients and stir until moistened. Coat a pan with cooking spray and turn the stove to medium heat. Spoon ¼ of the batter at a time onto the heated pan and cook until slightly brown and then flip to cook the other side. If a thinner batter is desired, add more water, 1 tablespoon at a time. Yield 4 pancakes. Top with artificial sweetener if desired.
